Home Preservation Workspace (Canning & Freezing) Continues Throughout the Winter

Every Thursday over the course of the summer with the expertise, guidance and support of Emily Guirl individuals met weekly at the Labor of Love Food Pantry and Nutrition Center to can and freeze their vegetables.  Labor of Love offered the kitchen each week free of charge for individuals to use.  Patrons were asked to bring their own ingredients and jars.  The space, commercial equipment, stoves and the professional facilitation of  Emily were provided by the Labor of Love.  Patrons blanched, steamed and vacuum sealed 16 pints of green beans, 2 pints of kale, 50 pints of shredded zucchini, 175 full ears of corn, 10 pints mashed buttercup squash, and 10 pints of brussel sprouts.   They canned 8-1/2 pints blueberry jam, 55 quarts of whole tomatoes, 6 pints apples sauce, 3-1/2 corn relish, and 10 pints cranberry sauce.  They used the food processors to shred food for vacuum sealing, for canning (relishes), and for fermenting (hot sauce).  

“The vacuum sealer received a great deal of use.  Patrons love it and it's very efficient for large batches.  Two families in particular have been utilizing the space, and their freezers are fully stocked, they tell me.  It's been successful. “ said Emily.  

Because the summer Home Preservation Workspace was so successful we hope to keep this going on a monthly basis throughout the winter.   There are many possibilities to utilize the kitchen space for food preservation.  If the Labor of Love has extra vegetables that need to be processed  patrons could  come and learn to can and take home the vegetables they preserved and/or donate the goods back to the food pantry.  And/or this monthly event could be an opportunity to come together to share recipes and taste each other’s creations related to food preservation.  The possibilities are endless and we hope to hear from the public about how this could be helpful for them.
